8 pommes de terre moyennes
4 c.à.s de farine
sel
emmental râpé selon le goût
huile
2 oeufs
compote de pommes chaude
Confiture de framboise

Pas à Pas:

  • Éplucher, laver et râper le plus finement possible les pommes de terre.
  • Les mettre dans une passoire et les égoutter à la main pour en faire sortir le maximum d'amidon.
  • Les mettre dans un saladier, ajouter les œufs puis la farine. Mélanger pour obtenir une pâte homogène. On peut également ajouter de l'emmental râpé.
  • Dans une poêle, mettre une fine couche d'huile à chauffer (de préférence de l'huile d'olive, c'est plus léger!).
  • A l'aide d'une grande cuillère, former des galettes à même la poêle (former d'abord une boule puis l'écraser pour obtenir une galette bien ronde, faire cuire à feu moyen pendant 6-7 minutes, retourner la galette lorsque le dessus commence à sécher. Retourner alors la galette, et laisser cuire encore 5 minutes environ.
  • Servir chaud avec la compote et la confiture.

6 medium potatoes, scrubbed
1 medium onion
2 eggs, lightly beaten
1/3 cup flour
1/2 teaspoon salt
cooking oil or bacon fat

Pas à Pas:

  • Grate potatoes and onion. Stir in eggs, flour and salt immediately.
  • In preheated electric frying pan (350 F)or frying pan over medium high stove-top, add cooking oil or bacon fat--about 2 T per batch.
  • Using a one/third-cup metal measuring cup, scoop up some potato-onion mixture, and spread in a circle in the pan. Flatten out a bit, to about a 5-inch thin cake. Fry for about 2 minutes per side until golden-brown and crispy around edges.
  • Transfer cakes to a warm plate or keep warm in the oven. Best when served immediately.
  • Serve with applesauce, honey, or butter with salt & pepper.

THE grating of 1 kg of potatoes and 4 onions is not something that can be classified as easy or quick but that’s where a food processor with a grater comes in. In many of the recipes I read through, the authors state that you shouldn’t rinse the grated potato to get rid of the starch and in other recipes they state you should rinse the potato. I honestly don’t know which one is better, but I was taught to rinse, so I rinse. There is also a debate going on about which flour is the right one to add to the rinsed potatoes. I believe potato flour is the best but there are lots of people who use corn flour instead. I actually prefer using regular flour instead of corn flour as it can go quite gooey if you don’t fry the potatoes straight away, the mixture almost always goes stodgy and sticky. These are perfect as an accompaniment to almost anything but I love them best when they are served with sour cream and smoked salmon. I found this recipe somewhere in my travels and I enjoy it

  • Rinse the grated potatoes in cold water and squeeze dry. I leave them in a colander to drain and then use a salad spinner to dry them, but many people prefer putting the potato in a tea-towel and squeezing them dry. Mix the potatoes and onions with the flour and seasoning. You really should not need more then 6tbsn of flour. When youâ??ve mixed in the flour (make sure itâ??s very well incorporated) it wonâ??t look like the puffer will stick together when you fry them, but they will. Heat the oil in a large frying pan. Use a Tablespoon full of mixture and gently drop in pan. Press down on them slightly when you pop them into the frying pan. About 1-2 minutes per side. Drain them on some kitchen paper and then put them on a roasting rack in a roasting tray and then place them in the oven to keep warm while the rest are frying.
