CSA Week 5
It’s already my fifth CSA pickup and its safe to say its officially fall in New York! Since I only get my CSA pickup every other week, it feels like summer is really flying.
Here’s what was included in my haul this week:
- 1 bag red potatoes
- 1 bag carrots
- 3 green peppers
- 2 bunches of scallions
- 8 green apples
- 3 onions
- 2 eggplants
- 3 bunches garlic
- Swiss chard
- 10 tomatoes
And here’s what I made:
I had a bunch of sauces that are typically used in Thai cooking in my fridge that I wanted to use up. I combined some fish sauce, red curry paste, and chopped garlic and sautéed up some veggies to eat with it.
Anyone else have an Instant Pot? It’s one of those appliances I was SO excited to get (I snagged one on Black Friday last year), but I’ve only used it about 10 times. When I was trying to figure out what to make this week, I thought a taco meat or chili recipe with lots of veggies would be perfect. Lexi from Lexi’s Clean Kitchen is one of my all time favorite bloggers and everything I’ve made of hers has been awesome, so I whipped up her Best Taco Meat in the Instant Pot. 10/10 would make again. I ate it with cauliflower rice sautéed with salt, pepper, and garlic powder.
I was craving breakfast for dinner one night, so I made an egg white omelet with green pepper, onion, Swiss chard and chopped scallions with pan fried potatoes, all from my CSA. Simple but good!
Finally, I brought apples to work on snack on each day. I don’t normally love green apples, but these were so crisp and delicious! I love eating them with some sort of nut butter for a snack that has fiber, healthy fat and some protein.
